  • 1 thumb-sized young ginger, sliced thinly

  • 10g cuttlefish floss (Roland stated 8g in the video, but we found 10g is perfect.)
  • 300ml water
  • 0.5 tbsp oyster sauce
  • A pinch of sugar
  • A pinch of salt
  • 200g baby kai-lan (Chinese broccoli) or any other leafy greens
  • Some cornstarch solution
  • 1 red chilli, halved and deseeded
  • 1 egg, beaten
  • 0.5 tbsp Chinese cooking wine (Shaoxing Huatiao wine)
  • A few dashes of white pepper
