Pineapple Fried Rice
Delicious Thai pineapple fried rice is healthy and yummy. It’s made with jasmine rice, shrimp, cashews and juicy chucks of pineapple adds a touch of sweetness. To impress your guests you can serve them in a carved out pineapple bowls.

Ingredients
  • 1 Ripe fresh pineapple-cut in half/carved
  • ½ Lb shrimp-peeled and deveined
  • 2 Cup cold cooked jasmine rice
  • ½ Cup pineapple chunks or canned
  • ½ Onion-diced
  • 3 Cloves garlic-chopped
  • ⅓ Cup roasted cashews
  • 2 Tbsp oil
  • 2 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 1 Tsp curry powder or turmeric powder
  • ½ Tsp white pepper powder
  • 1½ Tsp sugar
  • Cilantro for garnish
