Mozzarella Stuffed Meatloaf - Moist And Tasty
This meatloaf recipe is moist, flavorful, tasty and tangy with gooey cheese. Usually serve with mashed potatoes or mac and cheese. Meatloaf was never my thing until I found this recipe 🙂

Ingredients
  • 1 lb ground beef 453g
  • ⅓ cup onion-fine chopped
  • ½ cup bread crumbs or chicken stuffing
  • ½ cup milk
  • ⅓ cup ketchup
  • 1 egg
  • 2 tbsp parsley-reserve ½ tbsp for topping
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • 6 oz mozzarella cheese-optional
  • Meatloaf sauce
  • ⅔-3/4 cup ketchup
  • 2 tbsp sugar-optional
  • ½ tsp cayenne pepper or to taste
Instructions
  1. Bake 350 degrees for 50 minutes
  2. Mix all the ingredients gently until just combined. Overmixing will make meatloaf dense.
