Meat Sauce for Kao Soy
Kao soy is a staple dish of Tai Lue people from northern Laos. It is a rice noodle soup with tomato meat sauce. The key ingredient is the fermented soy bean paste. It adds depth and aroma to this dish. This dish is completely different from the northern Thai version which is made with coconut curry broth with egg noodles.

  • Ingredients
  • 1½ lb ground pork with some fat or chicken 680g
  • 1 lb tomatoes-sliced
  • 3 tbsp fermented soybean paste (Lue version) or fermented chili bean sauce shown in video
  • 3 tbsp sugar
  • 2 tbsp oil
  • 1½ salt
  • 2 tbsp chicken powder or 1½ tsp msg
  • 1 tsp chili powder
  • ¼ cup minced garlic
