Ingredients
  • 4 lb chicken whole, spatchcocked, cut in half or pieces
  • Spice Rub
  • 6 cardamom pods
  • 6 chiles de árbol stemmed
  • 4 whole cloves
  • 3 tsp coriander seeds
  • 3 tsp cumin seeds
  • 3 tsp black peppercorns
  • 2 tbsp dried rose petals
  • 1 tbsp curry powder
  • 1 tbsp ground cinnamon
  • 1 tbsp ground sumac
  • 3 tsp ground ginger
  • 2 tsp allspice
  • 1½ tsp nutmeg
  • 1 tsp ground fenugreek
  • 1 tsp salt
  • 8 cloves garlic mashed into a paste
  • 3 lemons separated
  • 3 tbsp olive oil
