- Unsalted butter: Use unsalted butter, DO NOT use margarine like Tuong An or Meizan.
- Almonds and biscuits added to the candy can be changed to nuts and biscuits according to preference, with the quantity remaining in the recipe. - I use Taiwanese cotton balls to add to the candy because the taste is very suitable, and cotton balls are usually white so the decoration on the top will stand out more. If you don't have both types, you can just use one type. You can buy Taiwanese floss ready-made, or if you participate in the Taiwanese Moon Cake class, use CT in class.
- You can replace the seasoned seaweed sprinkled on rice with seaweed pieces used to roll rice (grind before using), but the taste will be lighter.
