How to make irresistibly delicious coconut cream cake with pandan leaf cream
I added coconut flavor to this cake combined with pandan leaf ice cream. The two flavors of coconut and pandan leaves go together very well, both fragrant and fatty, the crust is soft and light with a rich, very attractive filling.

Ingredients
  • A. Coconut pandan cake
  • 33 grams dried coconut flakes
  • 75 grams coconut milk
  • 1 teaspoon (5ml) pandan extract/ pandan essence (optional)
  • 180 grams (about 6 large) egg whites
  • 1 teaspoon cream of tartar (optional)
  • 1 pinch salt
  • 15 grams sugar
  • 50 grams cake flour
  • 13 grams corn starch
  • 2 grams baking powder
  • B. Pandan flavoured whipped cream:
  • 150 grams whipping cream - cold, minimum 35% fat
  • ½ teaspoon pandan extract
  • 15 grams granulated sugar
