  • - ¼ teaspoon lemon juice
  • - 50g Sugar
  • - 35g No. 8 flour (or 20g No. 11 flour + 15g cornstarch)
  • - 10g Pure cocoa powder
  • - 15ml Unsweetened fresh milk
  • - 15g Cooking oil
  • - Mold 18cm
  • CREAM PARTS:
  • - 4g Gelatin
  • - 20ml Water (to soak gelatin)
  • - 45g Sugar
  • - 2 Yolks
  • - 200g Mascarpone
  • - 180g Whipping cream
  • - 15cm ring mold
  • - 4g pure black instant coffee
  • - 40ml Hot water
  • - 30ml Rum
