Fresh Hand Cut Noodles - Sen Khao Piak
This fresh hand cut noodles is gluten-free with chewy and soft texture similar to udon noodle. It is used in Laotian chicken noodle soup (khao piak sen).

- 2 Cups rice flour
- 2⅓ Cups tapioca starch
- 1¾ Cups boiling water
- Use about 1½ cups of hot water. When kneading if the dough is too dry add a little bit more hot water and if too wet add more tapioca starch. Knead until the dough is smooth and not sticking to hands
