Lao Gan Ma has so many types of chili sauce that you may be overwhelmed at first. Just get the one with black beans. If you can't get Lao Gan Ma, you can also use spicy fava bean filling or even black bean filling. These are a bit saltier, so reduce the amount if you're using them as a substitute for Lao Gan Ma.

Ingredients
  • 1 thumb-sized young ginger, sliced thinly
  • 4 - 5 stalks spring onion, add the white part first
  • 1 red onion, cut into wedges
  • 5 dried red chilli, rehydrated and deseeded
  • 4 cloves garlic, chopped
  • 2 tbsps Lao Gan Ma chilli sauce
  • 1 tbsp oyster sauce
  • 80ml (2.7 fl oz) water
  • 0.5 tsp sugar
  • 500g (17.6 oz) precooked frozen clams
  • 2 tbsps Chinese cooking wine (Shaoxing Huatiao wine)
  • Add the rest of the spring onions
