Chicken Noodle Soup - Lao Khao Piak Sen
Khao piak sen is Lao style chicken noodle soup. It’s made with simple ingredients and perfect comfort food for cold days. It is tasty and delicious. The noodle is gluten-free similar to udon with soft and chewy texture.

  • For the dough:
  • 2 Cups rice flour
  • 2⅓ Cups tapioca starch, plus for dusting
  • 1¾ Cups boiling water
  • Use about 1½ cups of boiling water first. Knead the dough if it’s too dry then add little bit more hot water. If too wet add more tapioca starch. Knead until smooth
  • For the broth:
  • 13 Cups water
  • 1½-2 Lbs chicken 700g
  • 1 whole onion
  • ½ Inch ginger-thin sliced
  • 1 Tbsp salt
  • 1 Tbsp sugar
  • 1½-2 Tbsp chicken bouillon
  • For garlic chili oil:
  • 4 Tbsp vegetable
  • 1 Head garlic-chopped
  • 1 Tbsp chili powder or to taste
  • Some people eat very spicy so, you can make as much as you like actually.
  • Chopped green onions and cilantro for garnish.
