Shumai (Siu mai) is a popular Chinese steamed dumplings. It is usually served as a dim sum snack. There are many types of dumplings, you can make it with pork, shrimp or chicken with flavorful seasonings.

Ingredients
  • 6 Oz shrimp 170g-rough chopped
  • ½ Lb ground chicken or pork 226g
  • 8 Oz can water chestnuts-drained and chopped
  • ½ Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp corn starch
  • 1 Tsp sugar
  • 1 Tsp sesame oil
  • ¼ Tsp black pepper
  • ¼ Tsp salt
  • 1 Egg white
  • 1 Tsp finely minced ginger
  • 1 Tsp finely chopped garlic
  • 1 Green onion-chopped
  • 1 Small carrot-small diced for topping
  • 30 Square or round wonton wrappers
  • Dipping sauce:
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar or 1½ Tbsp white vinegar
  • 1 Tbsp water
  • 1 Tsp sugar or to taste
  • ½ Tsp sesame oil
  • ½ Tsp red pepper flakes-optional
