The word inasal means grilled or roasted over coals in the Visayas, although it derives from the Spanish verb "asar" to roast. This recipe is from the Panay and Negros region, and has the characteristic flavor and orange hue that comes from annatto, or achuete. It pervasive flavor is sourness from the vinegar and calamansi, and the aroma of tanglad or lemon grass.

Ingredients
  • 8pcs Chicken quarter part
  • Marination Ingredients:
  • 6cloves Garlic
  • 13pcs Calamansi
  • ½c Vinegar
  • To taste Salt
  • Sawsawan Ingredients:
  • ¼pc Red Onion
  • 3pcs Sili Labuyo
  • 1pc Calamansi
  • To taste Soy Sauce
  • To tase Vinegar
  • Garlic Annatto Oil:
  • 6cloves Garlic
  • 10g Annatto seeds
  • ½c Oil
Notes
*Chicken inasal should be grilled over low heat.
*Place the grill 10 inches above the hot coals.
*Cooking time of inasal is 6.5 minutes or more depends how big your chicken is.
*Internal temp of the chicken should be 165c Degree.
*The secret to moist chicken inasal is frequent basting.
